Special Recipe For Preserving Children

To preserve children, take one large, grassy field, one-half dozen children, two or three small dogs, a pinch of brook, and some pebbles, mix the children and dogs together and put them in the field, stirring constantly.  Pour the brook over the pebbles; sprinkle the field with flowers, spread over all a deep blue sky and bake in the hot sun.  When brown remove and set away to cool in the bathtub.

Oatmeal Pecan Pancakes

 

3 oz pecans, toasted & chopped 2 cups buttermilk
1 1/2 cups old-fashioned oats, cooked 1/2 cup whole wheat flour (or all purpose)
1 tsp baking soda 1/2 tsp salt
2 large eggs 1 tblsp confectioners' sugar
1/4 cup confectioners' sugar 1 tsp cinnamon
maple syrup strawberries
  • In non-stick 12 inch skillet over medium high heat, cook pecans until golden brown.  Cool slightly & chop.

 

  • In large bowl, combine buttermilk, oats, flour, baking soda, salt, eggs, and sugar.  Mix until moistened.  May need to add a little more buttermilk.  Stir in pecans.

 

  • Pour batter by 1/4 cups onto griddle.  Cook until tops are bubbly and bubbles burst; edges will look dry.  Turn with pancake turner & cook until undersides are golden brown.

 

  • Mix 1/4 cup sugar and cinnamon.  Sprinkle pancakes with cinnamon sugar & serve with warm maple syrup & strawberries.

Pasta Jardiniere

 

1 lb 

pasta 2 tblsp butter
garlic cloves, minced 2 tblsp flour

1 cup

chicken broth 1/4 tsp crushed red pepper, optional

1 cup

broccoli flowerets, cooked 1 small zucchini, sliced, cooked
1 cup peas, cooked 1/2 cup ricotta or cottage cheese
1/2 cup plain yogurt scallions or green onions, minced
2 tblsp fresh minced parsley 2 tblsp grated Parmesan cheese
  • Cook and drain pasta according to package directions; set aside.

  • Melt butter in a large saucepan; add garlic & sauté, but do not brown.

  • Add flour & stir and cook until mixture is bubbly.

  • Add chicken broth & pepper; stir until thickened.

  • Add cooked broccoli, zucchini & peas.  Heat through.  Remove from heat & set aside.

  • Toss cooked pasta with ricotta and yogurt.  Add vegetables and toss to coat.

 

  • Garnish with minced scallions, parsley, and Parmesan cheese.

Makes 6 servings.

Peach Smoothies

 

1 cup  plain yogurt 1 cup orange juice (or 1/2 C frozen orange juice concentrate & 1/2 C water)
1 frozen banana 1 - 2 cups frozen peach slices (enough to fill blender 3/4 full)
  • Place the ingredients in your blender in the order listed (frozen items on top).

 

  • Blend to desired consistency.

 

  • You can substitute the frozen peaches for just about any other frozen fruit.
